Preparation:

1. We start by crushing the cookies (you can do it with a food processor or simply putting them in a plastic bag and rolling over them with a rolling pin). In a bowl, mix the crushed cookies with the melted butter and sugar until you obtain a homogeneous dough.

2. We line a removable mold with baking paper and spread the cookie dough on the base, pressing well so that it is compact. We put it in the refrigerator while we prepare the filling.

3. In a bowl, beat the cream cheese with the sugar until creamy. Add the whipping cream and continue beating until well combined.

4. Add the eggs, one by one, beating well after each addition. Add the tablespoon of vanilla extract and cornstarch, and continue beating until you obtain a smooth and homogeneous mixture.

5. We remove the mold from the refrigerator and pour the mixture over the cookie base. We distribute the fresh red fruits on top, pressing lightly so that they sink a little into the cream.

6. Bake in a preheated oven at 180 degrees for 45-50 minutes, until the surface is golden brown and when inserted with a toothpick, it comes out clean.

7. Remove from the oven and let cool completely before unmolding. Once unmolded, we decorate with more fresh red berries, mint leaves and sprinkle a little icing sugar on top.
